Quick healthy meals for me and my two year old?
I am a single mom I am a full time college student, I find it tough juggling my life between being a mum and studying so consequently I dont get much time tin the kitchen... its much easier to throw a pizza in the oven when we are hungry than rattling the pots and pans! I would really appreciate any ideas for quick healthy recipes, so I can practice in my spare time! I own a steamer that hasn't been used, and a blender! Thanks

I'm know kids love Macaroni and cheese. That can be a meal by itself for a 2 yr old and u will probably enjoy it too. It only takes about 5 minutes to make on the stove.

Chicken breasts go in the oven just as easily as a frozen pizza! Try to master the chicken breast and you will be off to a great start.
You can start off REALLY easy. There are already made crumb mixes you can coat your chicken breast with, pop it in the oven, and there you go!
Do you have a microwave? Baked potatoes are just as quick and easy. Wash the potato, prick it full of holes, and microwave. Most have a setting for baked potatoes.
Buy yourself some pre-packaged frozen veggies. They can be boiled or microwaved in minutes.
You can also make any of this ahead of time and simply reheat if you eat it within a few days.
Cook up some pasta, add marinara sauce and one baked chicken breast for a really full meal.
Fish is another easy and healthy way to go. Do not buy the breaded stuff. Buy fresh frozen. It can be broiled in the oven in no time at all....literally minutes. Add a little butter, garlic, and lemon juice and you are set. Serve with steamed rice.
Start buying salads! Great, healthy side dish for anything. And you can get them organic, in the bag, ready to eat in any supermarket.
Really...it's good you want to eat healthier. Much better for a toddler to start eating healthy from the get go. And much healthier for you.
Invest in a cookbook. That will give you some great basic starter recipes.
